Turkey Subs with Watermelon Jicama Salsa

We recently took on a challenge from Sam’s Fresh Salsa to “think beyond the chips” in how we use salsa. And when we tasted their watermelon-jicama salsa, we knew it would give just the right “zing” to one of our favorite picnic staples.

Sam’s makes their salsa from fresh-grown produce on their New Jersey farm. (This makes the Jolly Tomato family burst with pride for their native Garden State.) Sam’s has a variety of unique salsas with different flavors and heat levels. But one that we truly found compelling was the new watermelon-jicama salsa.

The watermelon-jicama salsa is mildly sweet with a very pleasant kick. Unlike many chunky watermelon or jicama salsas, this salsa is well-blended so it’s perfect for drizzling, garnishing, or dipping.

And yes, we love it with chips, but we also have found lots of great ways to use it in other dishes (more on that soon).

To kick off the summer picnic season, we used it as a condiment in this easy turkey sub recipe.

Turkey Subs with Watermelon-Jicama Salsa

The perfect picnic sandwich, this turkey sub is accented with the mild sweetness and tang of watermelon-jicama salsa.

Ingredients

  • 4 submarine (hoagie) sandwich rolls
  • 8 oz. sliced deli turkey (or your favorite vegan sandwich filling)
  • 4 slices provolone cheese
  • 1/2 red onion, thinly sliced
  • 4 tbsp Sam's Salsa Watermelon Jicama Salsa
  • 8 leaves lettuce

Instructions

  1. Split the rolls lengthwise. Layer each roll with 2 ounces of turkey, 1 slice of provolone cheese, and a few slices of red onion. Gently dollop one tablespoon of watermelon-jicama salsa on each sandwich. Top with two leaves of lettuce, close up the sandwich, and slice in half. Serve immediately.

This recipe is as easy as, well, making a sandwich. One thing to note, however, is the order of the ingredients. We put the lettuce on last (on top of the salsa) because it protects the bread from getting too wet from the salsa.

Bring your napkins, though, because this is a delightfully juicy sandwich. It’s just sweet and spicy enough to lure you in… and make you never want to eat a boring turkey sandwich again.
