Ray of Sunshine Breakfast Noodles

Today want to share noodle recipe that we’re calling “Ray of Sunshine Breakfast Noodles.”

And yes, you read that right; they’re breakfast noodles. Forget the sugary cereal; what better way to start the day than with some hearty noodles?

This yummy breakfast is made with Fortune brand Yakisoba noodles. These Japanese-style stir fry noodles are super-easy and quick to prepare. Even better, you can jazz them up just about any way you like.

What gives these noodles an extra “ray of sunshine” are soy-marinated hard boiled eggs, and spiralized butternut squash.

But first, before the recipe, let’s take a quick look at these noodles.

Fortune Noodles and “Chef Yaki”

The parent company of Fortune Noodles is called JSL Foods. JSL Foods began in 1938 when Otoichi and Kume Kawana, both immigrants from Japan, opened the Yamasa Fish Cake Company in California.

Frank Kawana, the fifth child of Otoichi and Kume, later took over the company and established JSL Foods in Los Angeles. He began producing Asian noodles, wrappers, and cookies.

In 2006, Teiji Kawana, Frank Kawana’s eldest son, assumed the presidency of JSL Foods – leading the company into its 3rd generation of family ownership.

JSL released its first Japanese yakisoba noodle item under the Fortune brand name (featuring the “Laughing Buddha”) in 1975.

It later introduced “Chef Yaki,” a cartoon character who encourages innovative cooking and creative fusion concepts. Chef Yaki is known for the motto, “There are no rules to stir fry!”

We like the way you think, Chef Yaki! These noodles are very tasty and super easy to use. Why follow the “rules” when you can turn these noodles into just about anything?

OK, so here are the Ray of Sunshine Breakfast Noodles.

Ray of Sunshine Breakfast Noodles

These Japanese style breakfast noodles are made with soy eggs and spiralized butternut squash.

Ingredients

  • 1/2 cup soy sauce
  • 1/4 cup sherry wine vinegar
  • 3 hard-boiled eggs
  • 1 3-serving package (5.92 oz.) Fortune Yaki-Soba noodles
  • 1 tbsp cooking oil
  • 1 1/2 cups spiralized butternut squash (12 ounces)
  • herbs for garnish (optional)

Instructions

  1. In a small saucepan, bring the soy sauce and sherry wine vinegar to a boil. Remove from heat. Add the peeled hard-boiled eggs to the saucepan, and let the eggs steep in the soy sauce mixture for five minutes, stirring frequently so the eggs turn an even color.

  2. Meanwhile, begin preparing the noodles according to the package directions. Remove the noodles from the packages and run under hot water, gently separating the noodles.

  3. Heat the oil in a large wok or frying pan over medium heat. Add the spiralized butternut squash and stir-fry until tender. Add the noodles, 1 1/2 cups of water, and the three seasoning packets. Stir to heat through, 1 to 2 minutes.

  4. Divide noodles into three serving bowls. Cut the eggs in half and put two halves on top of each bowl of noodles. Garnish with fresh herbs, as desired (optional). Serve immediately.

Breakfast Noodle Ingredients

About the rest of those ingredients… First, how do you get spiralized butternut squash? You have a few choices… One, you can use a spiralizer to make your own butternut squash noodles. Two, you can look in the fresh section of your supermarket, as many grocers are now selling pre-packaged spiralized squash. Three, you can look in the frozen food section of your supermarket to find an easy-to-use frozen version. (For our recipe testing, we used frozen veggie spirals and defrosted them for two minutes before we added them to the stir-fry.)

What about the soy eggs? Soy eggs add a great kick of flavor to this dish. While it sounds complicated, it’s really not. You basically take a hard-boiled egg and marinate it in soy sauce and vinegar for as much time as you like. The standard is about 2 to 5 minutes. However, if you like an egg with an extra salty/umami kick, you can leave it in for longer. (Just try to keep turning it so all sides pick up the color equally.)
