Not a juicer? That’s OK too – we didn’t use ours for juicing either. But we did use those glorious greens for some kale chips, a collard-greens-and-wild-rice dish, and a chard curry. Meanwhile, our kids stood by munching on the apples.
Turning Greens into Pesto
Oh, and of course we made pesto. Every time we get our hands on greens we make pesto. This time we made kale-pistachio pesto. (Simple recipe: Take 1 bunch kale leaves, trimmed of ribs, 1/3 cup extra-virgin olive oil, 1/4 cup grated Parmesan cheese, 1/4 cup shelled pistachios, and kosher salt to taste. Blend together until smooth). We slathered it on steak sandwiches with olive bread:
