Plus, if there’s something your family doesn’t like, say, broccoli, you can edit your preferences to suit your family’s tastes.
On one recent late summer week, it was extremely hot in our house when it was time to order. So we went through all of the choices and found the perfect box for our needs: The No Cooking Box. This box contains mostly fruit and only fast, easy-to-prepare vegetables – perfect for a week when no one wants to turn on the stove.
We chose the “More” size box ($46 per delivery), which came with kale, green chard, three heads of lettuce, purple peppers, a cucumber, potatoes, a cherry tomato medley, a cantaloupe, a persimmon, Asian pears, Bosc pears, and red grapes.
When it came time to make dinner with our new bounty, the most obvious choice would have been a salad with all of those leafy greens. But in our house, a big bowl of salad often results in “no thanks” from the kids. Instead, we decided we’d rather wrap things in lettuce. It added that fun, tangible, hands-on feel to dinner…and it was easy and required no cooking.
For this dinner, we decided to make easy Asian-style lettuce wraps. We used ground turkey for the main filling component, but you can substitute chicken, or use any leftover cooked meat or tofu you have on hand. We also used Soy Vey Hoisin Garlic Marinade and Sauce for garnishing and dipping because the taste was just right and it was right there in our fridge. (When it’s hot, the less time you have to spend thinking about these things, the better.)
Easy No-Cook Asian-Style Lettuce Wraps
- 1 small head lettuce leaves pulled apart, rinsed, and dried
- 1 pound cooked ground turkey may substitute grilled chicken or other cooked meat or tofu
- 1 carrot shredded
- 1/2 cucumber cut into julienne strips
- 1 small bunch cilantro
- 1/2 cup hoisin sauce We use Soy Vey Hoisin Garlic Marinade and Sauce
- 2 T. sesame seeds
Place one large lettuce leaf flat on a plate or board. Top with about 1/4 cup of ground turkey, and then garnish with carrot, cucumber, and cilantro. Drizzle 1 to 2 teaspoons of hoisin sauce on top. Sprinkle on a pinch of sesame seeds. Wrap the lettuce around the filling and eat.
For serving sizes, count on each person to eat three or four lettuce wraps – they’re surprisingly filling. And you can give people the option of eating it with a fork, of course, but we like eating it with our hands.
