Pandan Waffles

What is pandan? And why are these waffles green? We’re sharing these pandan waffles because they’re so delicious and we feel like everyone should have a chance to enjoy this delicious waffle flavor.

What Is Pandan?

Pandan is a fragrant plant with long green leaves, grown primarily in Southeast Asian. People use pandan leaves whole, or in the form of  paste, powder, or extract. Its flavor is similar to vanilla, but very sweet and grassy. You may recognize the flavor in some of your favorite Thai or Vietnamese foods. Pandan powder or extract can give foods a very pale green hue; hence these green waffles.

Why Pandan Waffles?

Pandan waffles are a popular Vietnamese street food. They are distinctive for their green hue, crispy exterior, and soft, sweet interior. These fragrant waffles get their sweetness from sugar coconut milk. Most likely you will not need any sweetener or syrup because they are plenty sweet on their own.

How Do You Make Pandan Waffles?

Yes, you can make pandan waffles purely from scratch, but we love this pandan waffle mix from Dragonfly Goods. (We received the waffle mix as a gift from our sister and this is not a sponsored post.) The waffle mix contains coconut milk powder, wheat flour, tapioca starch, sugar, rice flour, baking powder, pandan extract, and salt. It is vegan, dairy-free, soy-free, nut-free, and preservative-free. (It’s also made by a small and independent woman-owned business.)

All you need to do is add water to the mix and get your waffle iron ready. To make these waffles extra-cute, we used our Dash mini waffle maker with a snowflake pattern.

Waffle Making Tips

While we made these waffles, we discovered (through trial and error) a few ways to make them as delicious as possible.

First, these waffles tend to get very puffy. Be very restrained about the amount of batter you put in the waffle maker because you don’t want it to run over.

Second, since the waffles are puffy, they do get thick. Consider leaving them in the waffle maker an extra minute or two after the timer goes off.

Last, to get that extra-crispy exterior, lay the waffles out on a cooling rack after they come out of the waffle iron.

Serve with butter, powdered sugar (optional) and/or fruit for a delicious breakfast! Also, this may sound a little crazy, but we have seen these waffles served as an ice cream sandwich, with ice cream between two waffles. Decadent but seriously tasty!
