Whether it’s St. Patrick’s Day or just an afternoon when you need some cozy tea and a snack, these mini Irish tea biscuits hit the spot. The recipe is super-easy and quick. It’s also practically an antique, coming from our Irish Great Grandpa Ted.

The original recipe was a little more vague. For example, the quantities were mostly written as “a scoop of” or “a handful of.” Later generations filled in some of the question marks, and now we have this lovely reminder of Ted.

Mini Irish Tea Biscuits

These mini Irish tea biscuits are quick and tasty - perfect to enjoy with a spot of tea.

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 1/4 cup butter, softened and cut into small pieces
  • 1/3 cup plus 1 tablespoon milk (or almond milk)
  • 1/4 cup raisins (or currants)

Instructions

  1. In a medium bowl, mix together the flour, baking powder, salt, and sugar. Using a pastry blender (or a fork), cut in the butter until the mixture is evenly crumbly.

  2. Pour in the milk and stir. The mixture should be sticky. Scoop the dough by rounded tablespoonfuls onto a baking sheet lined with parchment paper. (You should have enough for six mini biscuits). Bake at 425 degrees for 12 minutes.

A few things to note while you’re baking them:

First, this recipe makes just six mini-biscuits, but you can easily double it. Second, you can use either raisins or currants. We like currants because they’re so tiny that they fit well with the theme of mini-biscuits.

 

Last, these biscuits are a little sweet but not super-sweet. We like them with a little butter but some sweet garnish is delicious too. Specifically, we’re thinking about raspberry jam or maybe a spot of honey… Sounds like the perfect tea time snack, right?
