Gingerbread Waffles for a Holiday Breakfast

A special holiday calls for a special holiday breakfast, which is where these Gingerbread Waffles come in. They are quick and easy to make. Plus, they have a little more “zing” than your average everyday waffles.

We also made these waffles with a special Dash mini waffle maker that makes a snowflake print. (So cute, right?) Unlike a lot of gimmicky holiday-themed kitchenware, this mini waffle maker works really, really well. You’re going to love using it during the holidays and beyond.

What Do You Need to Make Waffles?

To start out making your gingerbread waffles, you need to have a few key things on hand. Of course, you’ll need the basics: Flour, eggs, milk, butter, sugar, salt, and baking powder.

You will also need ground cinnamon and ground ginger. This recipe also calls for grated ginger, so you should have a knob or two of fresh ginger on hand.

Last but not least, you will need a waffle maker (we love our mini Dash waffle maker) and a non-aerosol cooking spray. (Aerosol chemicals may degrade the surface of your non-stick waffle maker). If you have cooking oil, you can just put it in any spray bottle (or get an oil sprayer).

How Do You Use a Waffle Maker?

Using a waffle maker is really super-simple. You plug it in, and a light will go on. (In the case of the Dash, it’s a blue light.) When the light goes off, that means your waffle maker is hot. You spray both sides of the griddle (top and bottom) with cooking oil. Then scoop about 1/4 cup of batter onto the center of the griddle.

Carefully close the griddle and then wait. Each waffle should take three to four minutes. You can open it up to check what it looks like after three minutes. When it’s golden brown, it’s done.

Gingerbread Waffles

These gingerbread waffles are quick and easy to make, and they have a little more "zing" than your regular waffle. 6

Ingredients

  • 1/3 cup butter
  • 1 1/2 cups milk
  • 1 egg (separated)
  • 1 tsp vanilla extract
  • 1 tbsp grated fresh ginger
  • 2 cups flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 cup sugar
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger

Instructions

  1. In a small saucepan, or in a microwave-proof cup, heat the milk and the butter until the milk is warm and the butter is melted. Set aside.

  2. Whisk together the egg yolk, vanilla, and grated ginger. Gradually add it to the milk and butter mixture. Set aside.

  3. Separate the eggs. In a medium bowl, beat the two egg whites at high speed until stiff peaks form. Set aside.

  4. In a mixing bowl, combine the flour, salt, baking powder, sugar, cinnamon, and ground ginger. Slowly add the milk mixture and stir until just combined.

  5. Fold the egg whites into the mixture and stir until just combined. Let the batter rest for 5 minutes.

  6. Heat the waffle maker and when it is hot, spray it with non-aerosol cooking spray. Add 1/4 cup batter into the waffle maker if using a mini waffle maker. (For a full-size waffle maker, or 4 waffles, add 1 cup of batter.) Cook for 3 to 4 minutes or until golden brown.

  7. Optional: Keep the waffles in the oven on low heat (200 degrees F.) while the remaining waffles are cooking. Serve warm with syrup or jam.

Gingerbread Waffle Serving Suggestions

First things first: As noted in the recipe, if you’re using a mini waffle maker, you don’t want your waffles to get cold while you continue cooking. You make keep the completed waffles in the oven at 200 degrees F. until you are ready to serve them.

Second: These waffles are extra special when you use Sparkle Syrup. This is one of our favorite maple syrups, made in Vermont by Runamok with edible pearlescent mica. Even after your waffles soak up the syrup, the “sparkles” remain.

Third: Waffles are delicious with fruit. We love strawberries, but raspberries, blackberries, and orange slices also add a really pretty “pop” of color.
