Creamy Polenta for #StreamTeam

What’s good about February? We’ve narrowed it down to three things: Chilly temps, comfort food, and movie nights. That pretty much sums it up, right?

For our #StreamTeam adventures with Netflix this month, we’re looking at fun family shows that everyone can enjoy. At the top of that roster is the new Full House show, known as Fuller House, which launches on Netflix on February 26. The new show focuses on the adventures of the Tanner/Gibbler girls, who are now all grown up with kids of their own. It’s a fun show for the littlest tykes all the way up through tweens and teens.

Need more movie ideas? Also on Netflix this month is Ferris Bueller’s Day Off, Nanny McPhee, and the super-cool fantasy series Once Upon a Time.

Now if you’re relaxing on a winter weekend – or even better, lazing around on a snow day – you’re going to need some comfort food that you can enjoy for either breakfast, lunch, or dinner. That’s where we’ve got you covered with this creamy polenta. It works for any meal, plus it makes a great savory base for just about any kind of topping or mix-in. Here we’ve used mushrooms, broccoli, and bacon; but you can also try grated cheese, sausage, pesto, peppers and onions, or any other topping you can imagine.

A creamy polenta that you can serve with the topping of your choice for breakfast, lunch, or dinner.

  • 2 cups whole milk
  • 2 cups water
  • 1 cup coarse polenta
  • 1 tsp. salt
  • 1/2 cup mild cheddar cheese we like Kerrygold's Skellig cheese
  • 1/4 cup grated parmesan cheese
  • Toppings such as sauteed mushrooms and onions crumbled bacon, or steamed broccoli.


  1. In a medium saucepan, bring the milk and the water to a gentle boil. Whisk in the polenta, reduce the heat to low, and continue simmering the mixture while stirring constantly for about 15 to 20 minutes, or until the mixture is smooth and creamy. Remove from heat. Stir in the salt and cheese.
  2. Scoop into bowls and top with the topping of your choice. Serve immediately.

One of the cool things about polenta is that once it’s cooked, you can transform it into something completely different. So for instance, you can smooth out the cooked polenta in a baking sheet and let it set; then either bake it or saute it in olive oil. Cut it into squares or diamonds and add the same toppings – different look, but same idea.
