“Cheeseburger” and “Fries” for #SchoolLunch

What’s that? It’s only the beginning of September and you’re already in a school lunch rut? We feel your pain. Some days it seems like there’s a long ten months ahead of us. To remedy some of that dread, how about this: Once a month during this school year, we’ll give you a new twist on school lunch so you can keep it fresh. For September, we’re going to show you how you can get your kids’ attention (and their friends!) with this healthier take on a cheeseburger and fries.

The central item that (literally) holds this lunch together is the bamboo party skewer, a favorite of ours for all sorts of stick-inspired meals and snacks. We got these at our local World Market but you can also find them in well-stocked supermarkets and party supply stores. They’re great for lunches because they’re fun, a little unexpected, and surprisingly convenient for grab-and-go meals.

When you put these cheeseburgers on a skewer, you also have an interesting shift in the bread-to-filling ratio. In a normal cheeseburger, you have about twice as much bread as everything else. On these skewers, the bread is in equal proportion to the meat, tomato, cheese, and lettuce. Just something to think about… and possibly a little bonus if your kids (like ours) tend to eat a lot of bread-heavy meals.

For the “fries,” we used commercially packaged veggie fries from Trader Joe’s, but you could also use any other kind of veggie fry that your kids might like – sweet potato, carrot, avocado, parsnip, etc.

Mini Cheeseburger Kebabs

2 hamburger buns or small croissants

2 cooked hamburgers

10 grape tomatoes
1 large leaf lettuce
2 ounces cheddar cheese
For assembly: 10 mini bamboo skewers
1. Prepare the ingredients: Cut the hamburger buns into small cubes. Cut the hamburger into cubes. Coarsely chop the lettuce until it is in bite-sized pieces. Slice the cheddar cheese into thin slices and then cut into small 1-inch squares.
2. Assemble the skewers: Thread the cut items onto each skewer, following the pattern of bread, burger, tomato, lettuce, cheese, bread. Repeat until all skewers are assembled. Keep skewers refrigerated or cooled until ready to serve. Serves 2.
Note #1: When we made these for a test run over the summer, our kids brought them to camp…and had an entire camp’s worth of kids gathering around to look at their lunches.
Note #2: You’ll want to pack this with an ice pack or some cold source to keep the meat safe.
