Are you eating as many fruits and vegetables as you can? If you’re feeling like you need some inspiration, why not give Breakfast Banana Splits a try?

We’re taking our inspiration from the Dole “Get Up And Grow” initiative. This initiative urges North Americans to incorporate more fruits and vegetables into their diets. Dole has a virtual cornucopia of fresh recipe ideas to help you along, from smoothies to main courses to desserts.
Inspired by those healthy ideas, we took some of our favorite Dole products and made what we’re calling Breakfast Banana Splits. They’re like a healthier version of a banana split, using Greek yogurt, tons of fruit, and granola instead of chocolate sprinkles. It’s kind of a more fun way to eat fruit and yogurt. And believe us, it didn’t even take a single word of encouragement to get the kids to dive into these breakfast “splits.”
Breakfast Banana Splits
Ingredients
- 4 large Dole bananas
- 2 cups Greek yogurt
- 1/2 Dole pineapple peeled, cored, and cut into chunks
- 1 cup mixed fresh berries we used blueberries, raspberries, and strawberries
- 1 cup crunchy granola
- 4 cherries optional
Instructions

Prepare the bananas: Remove the peels; then slice the bananas in half lengthwise. Arrange each pair of banana halves on a plate or long bowl.

Place a 1/2 cup scoop of yogurt between each pair of banana halves. Divide berries and arrange on top of yogurt for each plate. Sprinkle granola on top of each plate and garnish with a cherry if desired.
Of course you can mix it up however you like. For example, you can change up the fruits, add nuts, or try different flavors of yogurt or cereal. The beauty of making this for breakfast is that it helped us all to eat about twice as much fruit for as we normally would have. That fits right in with the goals we set in the Dole Get Up And Grow Pledge.
