(Adapted from Spinach Cake by Mom! What’s for Dinner?)
10 oz. rainbow chard, cleaned and chopped
3 eggs
1 1/2 cups sugar
1 tsp. vanilla
3/4 cup of vegetable oil
2 T. lemon juice
2 cups flour
3 tsp. baking powder
1/2 tsp. salt
Preheat oven to 350 degrees.
Steam the greens with 1/2 cup water until greens are wilted and tender. Drain any remaining water, then transfer greens to a food processor and puree until smooth. In a large mixer, cream together the eggs, sugar, and vanilla. Add oil, lemon juice, pureed greens, and combine well.
In a smaller bowl, sift together the flour, baking powder, and salt. Add dry ingredient mixture to spinach mixture and mix until just combined, about 1 minute (do not over-mix). Pour batter into a greased 11 x 9-inch pan. Bake for 30 to 40 minutes, or until toothpick inserted in center comes out clean.
Cream Cheese Frosting
4 ounces cream cheese
1/2 cup butter, softened
1 tsp. vanilla
3 1/2 to 4 cups powdered sugar
Beat cream cheese, butter, and vanilla together until smooth and creamy. Add powdered sugar gradually, continue beating until smooth. Spread evenly over cooled Green Cake.
