French Toast (with Ham and Cheese Variation)

 

Basic French Toast

3 eggs

3/4 cup milk

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

8 thick slices of white, wheat, or challah bread

1 tablespoon vegetable oil

In a large mixing bowl, combine eggs, milk, cinnamon, and nutmeg; beat until well mixed. Pour half of the oil into a large frying pan and heat the pan over medium heat. Submerge four slices of bread into the mixture and soak for 1 to 2 minutes (longer if the bread is dry). Place the bread into the frying pan and fry for two minutes or until golden brown on one side; then flip and repeat on the other side. Remove toast from pan; repeat with the remaining four slices of bread.

Ham and Cheese Variation:

Prepare egg mixture above except omit cinnamon and nutmeg. Prepare 2 ounces of diced (thinly sliced) ham, 2 ounces grated Monterey Jack cheese, and 1/2 finely chopped red pepper, and set aside. If desired, cut bread slices with cookie cutter into large shapes.

Fry the French toast as above. Top each slice of toast with the ham, cheese, and red pepper. Put the slices in the toaster oven for 1 to 2 minutes or until cheese is just melted.

Serves 4.
