Not Your Typical Salad

Happy 2014! Did you make a New Year’s resolution about eating more salad? Great! But if you’re thinking of a salad as an obligation, or as a monotonous stream of green lettuce leaves, you’re making it a lot more tedious than it really needs to be. Some of the best, easiest, and tastiest salads feature every color of the rainbow and don’t have a leaf of lettuce in sight. That’s a bonus for you, if you’re easily bored by lettuce, as well as your kids, if they turn up their noses at anything green and leafy.

On our Pinterest board, “Not Your Typical Iceberg Lettuce Salad,” you’ll find a kaleidoscope of colors and textures, ranging from radish leaves to millet to Beluga lentils. And in honor of the new year, we thought we’d share one of our family’s recent favorite “not-salad” salads, the Triple Carrot Ginger Salad. We happened to have this salad sitting on the counter when our 10-year-old walked by, so we asked, “Do you want to try some salad?” and this caused him to do a literal double-take and two steps back. “That’s a salad?!?” And for the record – He tried it and he liked it.


Triple Carrot Ginger Salad

3 carrots, one red, one yellow, one orange

1 1/2 cups shredded purple cabbage

2 green onions, chopped

1/4 cup extra virgin olive oil

Juice of one lime

1 T. honey

1 T. fresh grated ginger

Dash salt

Optional: 1/2 cup cashew pieces

Slice the carrots very thinly (we used a mandoline on a thin setting and held the carrots on a diagonal). Combine the carrots, purple cabbage, and green onions in a salad bowl. Set aside.

In a small mixing bowl, whisk together the olive oil, lime juice, honey, ginger, and salt. Toss the dressing with the carrot mixture. For a heartier salad, add cashew pieces. Serve immediately; serves 4.
