Mom’s Pizza Muffins

1 cup white flour

1 cup whole-wheat flour

1 T sugar

2 tsp. baking powder

1/4 tsp. salt

1 tsp. dried oregano

1 tsp. dried basil

1 egg

1cup milk

1/4 cup olive oil

1/4 cup minced sun-dried tomatoes

1/4 cup coarsely chopped olives (or pepperoni, or sausage, or meatballs)

1/2 cup shredded mozzarella cheese

2 T tomato sauce

2 T parmesan cheese

Preheat oven to 375 degrees. Prepare one dozen muffin tins either by greasing or lining with paper muffin cups. Combine flours, sugar, baking powder, salt, oregano and basil in bowl.  In a separate small bowl, mix together milk, egg, and olive oil. Add to the dry ingredients and stir just to moisten. In another small bowl, mix tomatoes, olives, mozzarella cheese, and tomato sauce.  Spoon 1 heaping tablespoonful of batter into a muffin cup, add 1 teaspoon of filling, then cover with another tablespoonful of batter. The muffin tin should be about 2/3 full. Repeat for the rest of the muffins.  Sprinkle with Parmesan cheese.  Bake for 18-20 minutes or until lightly browned.
