Zucchini is one of those garden crops that, if it’s going to succeed at all, it’s probably going to go gangbusters. In fact, if you know anyone with a garden, you’re probably getting an offer of free zucchini right around now.

When you have zucchini, your first thought is probably about sauteeing it, tossing it in with pasta, or maybe making zucchini milk. But there’s something else that’s super-rewarding to do with zucchini. That is, of course,  turning it into a chocolate dessert.

When you grate zucchini and add it in to baked goods, you don’t usually see a lot of green. However, you do get an amazingly moist and rich texture. To showcase this point, we started adding zucchini just about anywhere we saw chocolate.

Ingredients

  • 3 eggs
  • 1 1/2 (scant) cups sugar
  • 1 cup vegetable oil
  • 1 tsp. vanilla
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 cup cocoa powder
  • 2 cups freshly grated zucchini (about 2 to 3 small zucchini)
  • 1/2 cup chocolate chips

Instructions

  1. Beat together eggs, sugar, oil, and vanilla. Set aside.

  2. In a small bowl, mix together the flour, salt, baking soda, baking powder, and cocoa powder. Gradually fold the flour mixture into the egg mixture, being careful not to over-stir.

  3. Fold in the zucchini and the chocolate chips.

  4. Pour the batter into two small (or one large) greased loaf pans. Bake at 350 degrees or until a toothpick inserted comes out clean.

You just stir zucchini into the batter, and…

(See? There’s no visible zucchini.)

Variations on a Theme

Do you want to change it up even more? Add raisins to the chocolate chip mixture, or combine chocolate and vanilla chips..
