Ingredients

  • 2 large heirloom tomatoes
  • 15 to 20 mini watermelon cucumbers
  • 1/4 cup extra virgin olive oil
  • 2 ounces feta cheese, crumbled
  • salt and pepper to taste

Instructions

  1. Dice the tomatoes and slice the cucumbers; combine in a medium bowl. Toss with olive oil. Sprinkle crumbled feta cheese on top, add salt and pepper to taste.
