Triple Ginger Cookies

Traditional ginger cookies made with three kinds of ginger.

Ingredients

  • 3/4 cup shortening
  • 1 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 tsp grated fresh ginger
  • 2 1/4 cups all-purpose flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp (powdered) ginger
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 2 tbsp very finely chopped candied ginger
  • 1/3 cup sugar

Instructions

  1. Cream together the shortening, brown sugar, molasses, and egg until well blended and fluffy. Stir in the grated ginger.

  2. In a separate bowl, sift together the flour, baking soda, salt, powdered ginger, cinnamon, and cloves. Gradually add the sifted dry ingredients to the wet ingredients. (The mixture will be stiff.) Stir in the candied ginger.

  3. Scoop the dough into rounded teaspoon-full mounds and roll them until they are a nice balled shape. Roll each ball in the sugar to coat it, then place on parchment paper on a baking sheet.

  4. Bake the cookies for 10 to 12 minutes at 375 degrees F. Cool and remove from pan. Makes about 3 dozen cookies.
