Grandma Neeley's Apple Cake

An old-fashioned apple cake, just like Grandma used to make, from "Upscale Downhome" by Rachel Hollis.

Ingredients

  • 1/4 cup shortening
  • 1 cup sugar
  • 2 large eggs
  • 1 cup flour
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/4 tsp. nutmeg
  • 1 to 2 medium apples peeled and chopped (about 2 cups)

Instructions

  1. Preheat the oven to 350 degrees. Grease an 8-inch square cake pan and set aside.
  2. In a large bowl, cream the shortening and sugar. In a separate bowl, whisk the eggs, the add the eggs to the shortening mixture and stir to combine.
  3. In a separate bowl, mix all the dry ingredients except the apples, then combine with the wet ingredients. Fold in the apples.
  4. Pour the batter into the prepared cake pan and bake for 35 minutes or until a cake tester inserted in the center comes out clean.
