Triple-Carrot Ginger Salad

A salad that doesn't look like a salad: Three kinds of carrots and bright purple cabbage make this a colorful treat.

Ingredients

  • 3 carrots, one red, one orange, and one yellow
  • 1 1/2 cups shredded purple cabbage
  • 2 green onions, chopped
  • 1/4 cup extra virgin olive oil
  • juice of one lime
  • 1 tbsp honey
  • 1 tbsp freshly grated ginger
  • dash of salt
  • 1/2 cup cashew pieces (optional)

Instructions

  1. Slice the carrots very thinly (we used a mandoline on a thin setting and held the carrots on a diagonal). Combine the carrots, purple cabbage, and green onions in a salad bowl. Set aside.

  2. In a small mixing bowl, whisk together the olive oil, lime juice, honey, ginger, and salt. Toss the dressing with the carrot mixture. For a heartier salad, add cashew pieces. Serve immediately.
