A salad that doesn't look like a salad: Three kinds of carrots and bright purple cabbage make this a colorful treat.
Slice the carrots very thinly (we used a mandoline on a thin setting and held the carrots on a diagonal). Combine the carrots, purple cabbage, and green onions in a salad bowl. Set aside.
In a small mixing bowl, whisk together the olive oil, lime juice, honey, ginger, and salt. Toss the dressing with the carrot mixture. For a heartier salad, add cashew pieces. Serve immediately.
