Fresh Blueberry Compote

A thick blueberry sauce that can be used for topping pancakes or ice cream, or spreading on bread.

  • 2 cups fresh blueberries
  • 1/4 cup water
  • 1/4 cup sugar
  • 1 T. lemon juice


  1. Put all ingredients in a medium saucepan, bring the water to a boil, and reduce heat to a simmer. Simmer, stirring frequently, for 10 minutes or until the sauce reaches your desired consistency (the longer it simmers, the more it will reduce). Watch carefully to make sure the water does not all evaporate; add more water if needed.
