Creamy Polenta

A creamy polenta that you can serve with the topping of your choice for breakfast, lunch, or dinner.

Ingredients

  • 2 cups whole milk
  • 2 cups water
  • 1 cup coarse polenta
  • 1 tsp. salt
  • 1/2 cup mild cheddar cheese we like Kerrygold's Skellig cheese
  • 1/4 cup grated parmesan cheese
  • Toppings such as sauteed mushrooms and onions crumbled bacon, or steamed broccoli.

Instructions

  1. In a medium saucepan, bring the milk and the water to a gentle boil. Whisk in the polenta, reduce the heat to low, and continue simmering the mixture while stirring constantly for about 15 to 20 minutes, or until the mixture is smooth and creamy. Remove from heat. Stir in the salt and cheese.
  2. Scoop into bowls and top with the topping of your choice. Serve immediately.
