Ingredients
2cupswhole milk
2cupswater
1cupcoarse polenta
1tsp.salt
1/2cupmild cheddar cheesewe like Kerrygold's Skellig cheese
1/4cupgrated parmesan cheese
Toppings such as sauteed mushrooms and onionscrumbled bacon, or steamed broccoli.
Instructions
In a medium saucepan, bring the milk and the water to a gentle boil. Whisk in the polenta, reduce the heat to low, and continue simmering the mixture while stirring constantly for about 15 to 20 minutes, or until the mixture is smooth and creamy. Remove from heat. Stir in the salt and cheese.
Scoop into bowls and top with the topping of your choice. Serve immediately.
