The perfect picnic sandwich, this turkey sub is accented with the mild sweetness and tang of watermelon-jicama salsa.
Split the rolls lengthwise. Layer each roll with 2 ounces of turkey, 1 slice of provolone cheese, and a few slices of red onion. Gently dollop one tablespoon of watermelon-jicama salsa on each sandwich. Top with two leaves of lettuce, close up the sandwich, and slice in half. Serve immediately.
