Rainbow Sandwiches with Ojai Pixie Tangerines

These pretty sandwiches are made with a "rainbow" of veggies and Ojai Pixie tangerines. They have a little bit of spice and a little bit of sweetness.

Ingredients

  • 4 large slices of sourdough bread toasted if desired
  • 2 ounces shredded purple cabbage (basically a large handful)
  • 1/2 large red onion, thinly sliced
  • 1 ounce fresh spinach (basically a large handful)
  • 1 large yellow bell pepper, chopped
  • 3 Ojai Pixie tangerines, peeled and sliced
  • 2 Roma tomatoes, sliced
  • 1/4 cup Romesco sauce

Instructions

  1. Assemble all of the ingredients, peeling and chopping as needed. Lay out the slices of bread. Begin stacking the ingredients on two of the slices: purple cabbage, red onions, spinach, yellow peppers, Ojai pixie tangerines, and tomatoes.

  2. On the other two slices, divide the romesco sauce and spread evenly. Place the romesco-topped slices on top of the veggie-topped slices, and carefully cut the sandwich in half to reveal the "rainbow." Serve immediately.
