Chocolate Buckwheat Banana Bread

A delicious sweet chocolate chip banana bread, made with buckwheat flour so it's gluten free.

Ingredients

  • 3 ripe bananas, peeled
  • 2 eggs
  • 1/2 cup plus 1 tbsp butter, melted
  • 1 cup sugar
  • 1 cup buckwheat flour
  • 1 cup all-purpose gluten-free flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup hot water
  • 3/4 cup chocolate chips

Instructions

  1. In a large bowl, mash the bananas. Whisk in the eggs, melted butter, and sugar. Set aside.

  2. In a smaller bowl, sift together the buckwheat flour, gluten-free flour, baking soda, and salt. Add the flour mixture alternately with the warm water to the banana mixture. Stir in the chocolate chips, being careful not to over-mix.

  3. Pour the batter into a large greased loaf pan. Bake at 350 for one hour, or until a toothpick inserted comes out clean.
