Scotch Eggs

An easy recipe for Scotch Eggs, adapted from Disney/Pixar in honor of the movie "Brave"

Ingredients

  • 1/2 cup flour
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 raw egg
  • 1/4 cup milk
  • 1 cup panko bread crumbs
  • 1 tsp finely minced fresh parsley (or 1/2 tsp dried parsley)
  • 4 eggs, hard-boiled and peeled
  • 8 ounces bulk pork sausage
  • oil for frying
  • additional salt and pepper to taste

Instructions

  1. Choose three bowls with wide mouths for a "breading station." For the first bowl, combine flour, salt, and pepper. For the second bowl, whisk egg and milk together. For the third bowl, combine panko bread crumbs and parsley. Set bowls aside.

  2. Divide sausage into four equal pieces; roll into balls and then flatten them with your hand. Encase each hard-boiled egg in a roll of sausage, pinching the sausage to cover the egg entirely.

  3. Dip each sausage ball into the flour, then the egg wash, then the bread crumb mixture.

  4. Heat cooking oil to 350 degrees. Cook each ball for 5 minutes or until golden brown and sausage is thoroughly cooked. (If you are not deep-frying them, make sure you turn them so that all sides get cooked). Drain on paper towel before serving.
