Purple Snow Peas and Walnuts

We’re about to make your summer a little…purple-r. (Hey, that’s a good thing!) You know how there’s nothing like a crisp, tender, and sweet snow pea? Now imagine that same tasty veggie, but in real honest-to-goodness purple form, and you have these amazing Purple Snow Peas from Frieda’s Produce.

The snow peas have deep purple pods with tiny green peas inside, and they taste similar to green snow peas. But they maintain this intense dark – almost iridescent – purple color when they are cooked so you can steam them or put them in your favorite stir-fry and still have the same great color.

We wanted to showcase these pretty snow peas, and we happened to have some tasty California walnuts on hand, so we made this Purple Snow Peas and Walnuts stir-fry. The walnuts add just the perfect crunch to complement the snow peas, and the sesame flavor ties it all together. Give it a try and you might be surprised when your family starts asking for more purple foods.

Purple Snow Peas and Walnuts

1/4 cup chopped walnuts

1 T. sesame oil

1 x-ounce package of purple snow peas

Heat a large skillet or wok over medium-high heat. Add the walnuts to the pan and toss quickly to toast for 3 to 4 minutes. Remove the walnuts from the skillet and set them aside. Add the sesame oil to the pan, and when it is hot, add the purple snow peas and cook for 4 to 5 minutes or until slightly tender. Add in most of the nuts for the final minute of cooking and stir to combine. Transfer to a serving platter and top with remaining nuts. Serves 4.

    Sometimes simple is just the best! I have to admit I’ve never had purple snow peas, but I want them!
