Crunchy Miso-Almond Coleslaw Recipe

Crunchy coleslaw with miso-almond dressing

We made this coleslaw with ingredients found at our farmers’ market. However, you can easily pull it together with similar and readily available ingredients.

The base of this Miso-Almond Coleslaw is crunchy shredded cabbage. (Alternatively, we tried it with Brussels sprouts and it was equally tasty!)

Next, you get a nice spice and crunch from a spiced ground nut mix.

And finally, to top it all off, a creamy miso-almond dressing, whisked together with almond butter and sesame oil, holds it all together.

You can garnish it with sesame seeds, or just add more spiced ground nuts. Do what you like! We love all of these healthy ingredients, and mixed together, it’s a salad that you’ll want to keep making.

Crunchy Coleslaw with Miso-Almond Dressing

Ingredients

  • 1/3 cup miso salad dressing (your favorite variety, creamy style)
  • 2 tbsp almond butter
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1/4 cup spiced nuts, ground or coarsely chopped, divided
  • 8 cups shredded green cabbage (about 1/2 a head) or shredded Brussels sprouts
  • sesame seeds (optional garnish)
  • cilantro leaves (optional garnish)

Instructions

  1. In a small container, whisk together the miso dressing, almond butter, sesame oil, and rice vinegar. The mixture should be the consistency of a creamy dressing. If it is too thick, whisk in more of the miso dressing. If it is too thin, add almond butter.

  2. Add the shredded cabbage into a large bowl and toss with the dressing. Stir in most of the ground nuts, reserving a tablespoonful or so for garnish.

  3. Garnish with ground nuts, sesame seeds, and/or cilantro leaves. Serve immediately. (If not serving immediately, hold off on the nuts and sesame seeds until you are ready to serve.)

 

Farmers’ Market Inspired Ingredients

This Miso-Almond Coleslaw recipe was inspired by a visit to the Manhattan Beach Farmers Market. The market likes to feature small up-and-coming and local food purveyors. At the market, we discovered three of the key ingredients for this salad:

Miso Dressing from Dave’s Gourmet Korean Food in Los Angeles;

Almond Butter from Arnett Farms in Fresno;

NutTop ground spiced nuts from SidiesĀ  (DM them on Instagram to inquire about shipping/delivery).

Of course, if you don’t have access to these specific items, you can use any miso dressing, any almond butter, and you can even make your own ground spiced nuts. (Or purchase spiced nuts and grind them. We suggest Za’atar spice.)

Our only caveat is that ground nuts do not stay crunchy long in coleslaw. It’s best to prepare this miso-almond coleslaw right before you serve it. Alternatively, you can prepare the cabbage and dressing; then add the nuts at the last minute.
