Chickpea-Carrot Hummus

1 can chickpeas, drained, with 1/4 cup liquid reserved

1/4 cup fresh-squeezed lemon juice

3 T. tahini (sesame paste)

1 carrot, peeled and cooked

4 slices gluten-free whole grain bread

Optional: Extra-virgin olive oil, paprika

Place chickpeas, reserved liquid, lemon juice, tahini, and carrot in a food processor, process until smooth. Spoon hummus into a serving bowl; if desired, drizzle with extra-virgin olive oil and a dash of paprika.

Toast the bread until very crispy. Slice into thin strips. Serve toast slices alongside hummus.

Serves four.
