True Food Kitchen Spring Menu Is Fresh and Colorful

If you know True Food Kitchen, you’ll understand why spring is one of the most exciting seasons at this plant-driven restaurant (well, OK, summer, fall, and winter are exciting too, but you have to give some special props to spring). And the new True Food Kitchen spring menu is everything you’d hope it would be… bright, green, and heavenly delicious.

We’ll start with our hands-down favorite, the Spring Asparagus Toast (yes, asparagus is a delightful change-up over that ever-present avocado toast). This vegan dish is served with asparagus, roasted cipollini onion, mashed green garbanzo and tahini; and garnished with mint, hemp seed, and thinly sliced radishes. It’s so beautiful that you almost won’t want to eat it. And it comes sliced into four pieces, so you could share with a friend, but to be honest, we¬† trying our best to distract our dinner companion so we could sneak just one more piece without him noticing. (Shhh!)

Also new in the vegetable category is the Miso Glazed Eggplant, which has such an amazing array of flavors you will find yourself wanting to lick the bowl to savor every last taste. It starts with eggplant, and then it’s topped with lentil, roasted pepper, almond, truffle, tahini yogurt, and black almond pesto. This was a fun one to share, although if you ordered it for yourself, you’d be more than satisfied.

Next up on the True Food Kitchen spring menu is the Seasonal Ingredient Salad. This is a salad that’s on the menu year-round but with seasonal variations. We told our server that we loved the fall and summer variations so much that we needed to be convinced that the spring version was just as good. Well, we were more than convinced. This salad features grilled broccolini, asparagus, watercress, green garbanzos, golden beets, raisins, goat cheese, sprouted almonds, and turmeric chia vinaigrette (as always, vegans can ask to hold the cheese). The grilled broccolini and asparagus take a starring role, but the golden beets and radishes help bring out the full range of spring colors and flavors. It’s hearty without being heavy – in other words, the perfect spring salad.

And now for the pizza…Yes, this is a vegan pizza, but we can guarantee that vegans and non-vegans alike will be clamoring for a piece of this pie. It starts with grilled artichoke, and it’s finished off with spinach, summer squash, black walnut pesto, lemon, aleppo chili, and vegan almond ricotta (which you would never know was vegan). And of course we’re a big fan of True Food Kitchen’s pizzas, which always come with a tasty, crispy crust (you can order gluten-free if you like as well).

Now given that it’s spring, you won’t want to miss a chance to have a pretty dessert made with some colorful spring produce… and the Strawberry and Rhubarb Crisp is the perfect finishing treat (and we don’t need to tell you how much we love rhubarb). It’s a perfect size to share with a friend, but if you want to eat it all by yourself we’ll totally understand.

Last but not least, you’re definitely going to want to enjoy one of their signature plant-based drinks. New on the True Food Kitchen spring menu is the Strawberry Smash (bourbon, muddled strawberry, and lemon) and the Cucumber Cooler (cucumber and honey lemonade). These drinks do double duty – they taste great, and they make you feel like you’re doing something healthful for yourself in the process. Oh, and moms take note: You’re going to want to check out the special “Mom-osas” coming to True Food Kitchen for mothers day.
