Today we’ve got some Pineapple-Banana Upside-Down Waffles that are perfect for you if you’ve been spending some time in the “upside down” lately. That’s right – THE “upside down.” If you know what I’m talking about, you’ve probably been watching Netflix‘s “Stranger Things” – the creepiest, most suspenseful, most delightfully 80s-throwback show on TV.

We don’t want to say even the tiniest bit more without ruining anything… except to say you should know that there’s a mysterious character named “Eleven” who can go back and forth between here and a parallel universe known as the “Upside Down.” Oh, and she (yes, Eleven is a girl with a shaved head) loves Eggo waffles. Enough said.

We made these Pineapple-Banana Upside-Down Waffles in honor of “Stranger Things” and all things spooky and creepy this month. They’re regular on the top side, but on the flip side they’re just a little bit twisted.

Now of course making them takes just a little more work than popping an Eggo in the toaster…but really, it’s just a matter of making the batter, putting them in the waffle iron, and you’re done. The pineapple-banana-brown sugar mixture on the bottom side caramelizes in the waffle maker and becomes sticky-sweet, so you probably won’t even need syrup to eat them.

Classic breakfast waffles with a sweet surprise - a banana-pineapple layer on the bottom.
Ingredients
  • 1¾ cup flour
  • 2 T. sugar
  • 1 T. baking powder
  • ¼ tsp. salt
  • 2 eggs, lightly beaten
  • 1¾ cups milk
  • ¼ cup butter (1/2 stick), melted and cooled
  • 1 tsp. vanilla
  • Cooking spray
  • 1 cup finely chopped pineapple pieces
  • 1 banana, thinly sliced
  • ⅓ cup brown sugar
Instructions
  1. In a large mixing bowl, stir together the flour, sugar, baking powder, and salt. Make a "well" in the center of the dry ingredients; set aside. In a smaller mixing bowl, combine the eggs, milk, melted butter, and vanilla. Pour the egg mixture into the flour mixture and stir just until moistened, being careful not to over-mix.
  2. Heat the waffle iron according to manufacturer's directions. Spray with cooking spray. Ladle approximately ¾ cup batter (or however much your waffle iron will hold) into the waffle iron. Cook for 2 to 3 minutes, or until lightly browned. Lift open the waffle iron, add several pieces of pineapple and banana slices, sprinkle with brown sugar, and then continue cooking another 2 to 3 minutes, or until the waffle iron timer goes off. Repeat until the batter is finished. Serve immediately. Serves 6.

These are so easy, in fact, that we think we’re going to start making waffles like this all of the time… Put in the batter, caramelize fruit, and presto – instant waffle treat. We’ll try this with strawberries and raspberries and report back.

Also, if you haven’t watched “Stranger Things” yet, please sit down and start it tonight. It’s a little creepy but it’s a lot of fun, and we promise you’ll be having 80s flashbacks all the way from now through Halloween.
