If you’ve seen the delightful Unbreakable Kimmy Schmidt on Netflix, you’ve probably crowed, “Hash brown – no filter!” at some point. Well, get ready to crow again because Season 2 of ‘Kimmy’ is about to premier on Friday, April 15.

In honor of Kimmy, Titus, and all of the crazy but lovable characters on the show, we created these wacky little Hash Brown Squares: We made a perfectly baked sheet of hash browns and cut them into squares. To serve them, we stuck fancy toothpicks in them and made them into pops. Why pops? Because you’re going to want to eat them while you’re sitting in front of the TV, silly! Grab a stack and munch away (and remember, it’s better than eating beans out of a Florida Marlins cap):

Here are the hash browns straight out of the oven – cut them with a pizza cutter while they’re still hot.

A crispy and tasty hash brown - on a stick!
  • 1 20-ounce bag frozen shredded potatoes for hash browns, defrosted (we like Trader Joes brand, but you could also sub 4 heaping cups of grated and squeeze-drained potatoes)
  • 6 T. butter, melted
  • 2 eggs
  • ¾ cup grated cheese (Cheddar or Monterey Jack, or a mixture)
  • ¾ tsp. salt
  • Fresh ground pepper
  1. Dump the defrosted hash browns into a large bowl. In a smaller bowl, whisk together the eggs and melted butter. Pour the butter/egg mixture over the potatoes, add the cheese, salt, and pepper, and stir to combine well.
  2. Line a cookie sheet with parchment paper. Spread the potato mixture evenly over the paper so that it is evenly spread about ½ inch thick.
  3. Bake at 400 degrees for 40 minutes or until light brown and crispy. Remove from oven and use a pizza cutter to cut potatoes into 2-inch squares. Spear with a cocktail toothpick and serve warm.

And here is the finished product, complete with easy-to-hold toothpicks. Note: We chose these cheery sunshine toothpicks because they seemed to be something that Kimmy would have on hand…
