The snow pea shoots (Dau Miu) are from Jade Asian Greens, which is our favorite source for beautiful and fresh Asian greens.

Asian greens, you ask… with pasta?!? Why yes – in fact, these versatile greens are the perfect accompaniment for all sorts of dishes. Whether your flavors are Asian, Italian, French, Southern, or anything else; somehow you can always fit in Asian greens. Here’s the package you can look for in the store:

Of course it’s easy to start with them fresh. But if decide you want to use them later, they freeze beautifully and defrost within a matter of minutes.

We love the snow pea shoots because they are so fresh and delicate, with the little tendrils curling around in a lacy pattern. They have a mild flavor of peas, spinach and a hint of watercress, with a year-round hint of spring.

Snow Pea Shoot Pappardelle

A delicious and delicate pasta dish with wilted snow pea shoots

Ingredients

  • 3 tbsp butter
  • 2 cloves garlic, peeled and minced
  • 1 cup vegetable stock
  • 8 ounces snow pea shoots
  • 1 pound pappardelle noodles
  • 1/2 cup freshly grated Parmigiano cheese
  • salt to taste
  • pink peppercorns

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the garlic and saute until pale golden, about three minutes. Add the vegetable stock, bring the mixture to a boil, and then reduce it to a simmer for 15 minutes.

  2. While the stock is simmering, bring a large pot of water to a boil and cook the pappardelle. When the pappardelle is finished (10 to 12 minutes), drain it and transfer it to the skillet with the stock mixture. Add the snow pea shoots and combine. The snow pea shoots will be just wilted.

  3. Divide the pasta among six plates. Top with grated Parmigiano cheese and pink peppercorns. Serve immediately.

These tasty greens are a source of Vitamins A, B, C; calcium, potassium, iron, folate, and protein. And we’re pretty sure you’ll need all of that after the past few weeks of holiday indulgence.

Note: When we made this dish, we thought it looked pretty with a billowy pile of fresh-grated Parmesan cheese on top. And to complete the holiday color theme, we added a few pink peppercorns on top for color.
