We love the snow pea shoots because they are so fresh and delicate, with the little tendrils curling around in a lacy pattern. They have a mild flavor of peas, spinach and a hint of watercress, with a year-round hint of spring.
These tasty greens are a source of Vitamins A, B, C; calcium, potassium, iron, folate, and protein. And we’re pretty sure you’ll need all of that after the past few weeks of holiday indulgence.
When we made this dish, we thought it looked pretty with a billowy pile of fresh-grated Parmesan cheese on top. And to complete the holiday color theme, we added a few pink peppercorns on top for color.
