We’re home for spring break this week, which means there’s a lot of goofiness going on around the house, largely inspired by Phineas and Ferb on Netflix. If you haven’t seen Phineas and Ferb, you need to give it a try: Phineas and Ferb are pals who love inventing, exploring, carrying out crazy schemes, and staying one step ahead of Phineas’s sister Candace at every turn.
We have a young “Phineas” in the house who’s similarly creative in coming up with plans to make the day more interesting. Example: We’ll be walking through the farmers’ market and he’ll say something like, “Mom, I think today we need to see if we can set the record for making the world’s largest pickle.”
Well, OK, then.
I had no idea if this would work, or even taste good, but I didn’t mind letting the house inventor take the lead and going along for the ride. (For the record: It tasted like a large marinated vegetable.)
Later on as I surveyed the oddball list of leftovers from Easter, Passover, and a birthday celebration, I asked him what he thought we should make for dinner. “How about…chicken…pancakes?” came the answer – and we both cracked up, but it seemed like a pretty good idea at the time.
For these chicken pancakes, we used a standard recipe for corn cakes and we added leftover chopped cooked chicken, corn, and grated cheddar cheese.
They actually went over pretty well, and although they did taste good, I think it might be more likely that everyone just liked saying, “I’ll have some more…chicken…pancakes… please.”
Creative? Absolutely. Delicious? Yep. Goofy? Of course. Phineas and Ferb would have definitely approved.
