Expo West and Safe Eggs

Last week’s Natural Product Expo West was epic in both size and scope, with more than 71,000 attendees, and more than 2,700 product exhibitors of natural and organic products. I had a chance to sample hundreds of new items, from turmeric drinks to snack bars made with cricket flour (“You’re not truly paleo unless you eat bugs“) and I feel like I barely scratched the surface.

How did I sort through it all? I had a great experience being part of the Kitchen PLAY team with Casey Benedict; joined by Jackie of  The Seaside Baker, Valerie of Mama Likes to Cook, Carolyn of Healthy Voyager, Sara of My Imperfect Kitchen, Daily of Daily Curlz, Chrystal of Happy Mothering, Jean of Gluten Free Doctor, and Mimi of Mimi Avocado. We worked with four amazing companies: Nature’s Path Organics, Enzymedica, Litehouse Foods, and Davidson’s Safest Choice Pasteurized Eggs.

One of the main reasons I was excited to write about Safest Choice Pasteurized Eggs was that their product is one I use all the time and love. These eggs are pasteurized with a special warm water bath, making them safe for consuming raw or semi-cooked. That means you can eat your cookie dough, your Caesar salad dressing, and your spaghetti carbonara with no worries about the safety of your food, because the pasteurization process eliminates the risk of salmonella in eggs before the eggs even enter your kitchen. (In my family’s case, that also means making our favorite Viennese torte with a rich buttercream recipe that calls for raw egg yolks.)

    I’ll have to look into these. My daughter loves runny sunny side up eggs.

    Those eggs really, truly save the day with certain recipes. And even with eggs over easy in the morning, since we know that unless an egg is cooked to a hard state, it is considered raw. So all those gorgeous runny eggs need to be made with pasteurized eggs, for safety. Dying to win!
