Fresh Produce Gift Baskets

It’s that time of year for giving. Instead of the same old standbys, why not give out fresh produce gift baskets? Our friends over at Melissa’s have some wonderful gift baskets that will please even the pickiest eater.

When we were scrolling through all of the choices, the Baby Vegetables Basket ($71.99) was one of the first fresh produce gift baskets to catch our eye. It is chock full of so-cute-you-can-pinch-them baby veggies, neatly trimmed and ready for snacking and cooking. The selection varies depending on the season, so our baby veggie basket included baby potatoes, onions, beets, green cauliflower, carrots, green beans, and pattypan squash. The veggies were super-fresh and nearly flawless. They could have made a perfect centerpiece if we didn’t already have designs on eating them.

Cooking Up Baby Veggies

What do we like to do with a huge basket of baby veggies? Roast them, of course. First, we did a little additional peeling and trimming. Then we halved the vegetables and tossed them together in a large shallow baking pan. Next, we coated them generously with extra virgin olive oil, then added just a dash of balsamic vinegar as well as salt and pepper. Finally, we roasted them for about 50 minutes at 350 degrees. Note: We put the green beans in at the halfway point because they cook much more quickly than the other vegetables.

And…voila! Instant side dish. This one would be especially pretty for Thanksgiving. We roasted approximately 3/4 of the vegetables (as much as would fit in our pan) and it served 8. If you roasted the entire basket, it would serve about 10 to 12.

    I agree with Dorothy. It’s only 9:50 am and I too am ready to dig into those roasted veggies!!
    Gee, should I still bring the asparagus or will this be on our Turkey Day menu 🙂
