Here’s a fun new treat that arrived at our doorstep this week: Mini watermelon cucumbers from Melissa’s Produce. Just like the name promises, they look like miniature watermelon, but the taste is definitely cucumber. These little cuties, an heirloom variety that is native to Mexico and South America, are each about the size of a quarter.
One of the best ways to eat them is to pop them in your mouth, one after the other. But if you’re looking for a twist on your usual salad, they’re the perfect crunchy addition. So – in an effort to make lunchtime just a little bit cuter – we sliced them into a special salad with heirloom tomatoes. Delicious!
Mini Watermelon Cucumber Tomato Salad
2 large heirloom tomatoes
15 to 20 mini watermelon cucumbers
1/4 cup extra virgin olive oil
2 ounce feta cheese, crumbled
Salt and pepper to taste
Dice the tomatoes and slice the cucumbers, combine in a medium bowl. Toss with olive oil. Sprinkle crumbled feta cheese on top, add salt and pepper to taste.
These cucumbers are available in the late summer/early fall – Look for them in your produce department with the Melissa’s label.
