You know the old joke about how the mom goes on vacation and winds up doing all of the same chores she always does, but in a more scenic location? Yeah, it’s been a little bit like that – but we’re not complaining. While we stayed in a lovely beach cabin on the Olympic Peninsula, we cooked just a few simple meals (pasta, pizza, grilled stuff) and tried to avoid dish duty as much as possible.
It’s partly because of those few blissful days on vacation that we’re in total denial about school starting this week. We’re not ready for lunch-making, homework-helping, and complicated schedules just yet. For now, we’re going to savor one last tasty memory from our summer vacation: this unbelievably luscious beet/mascarpone ice cream we enjoyed at Ruby Jewel ice cream in Portland:
Everything about this ice cream pretty much screams “summer,” from the brilliant color to the melt-in-your-mouth richness – and it didn’t taste beet-y at all. But like everything else summery, we had to say our goodbyes before it melted. We’ll be back later this week with more great food ideas for kids. Farewell, summer.
