Pineapple Coconut French Toast

Our kids are big milk drinkers, and they’ve recently discovered that they love almond milk (especially the flavored kind) just as much as cow’s milk because it’s so rich and creamy.

What are the benefits of almond milk? Of course it’s lactose free, soy free, and gluten free. It’s also – surprisingly – a great source of calcium, so you don’t have to give that up if you’re not drinking milk.

Some of our favorite almond milk comes (where else?) from California, or more specifically Califia Farms. Califia Farms produces all of its products locally in California. Its manufacturing plant is eco-friendly, energy efficient, clean-water responsible –  and Califia repurposes more than 90% of its post-production byproduct.

Recently we started experimenting in the kitchen with almond milk, and we were happy with just how versatile and tasty almond milk can be in cooking. Our newest favorite? French toast made with Califia Farms’ coconut-flavored almond milk – a rich and flavorful milk that has no sugar added. Serve this French toast with sweet grilled pineapple and you don’t even need syrup.

Pineapple Coconut French Toast

1/2 cup coconut flavored almond milk

3 eggs

Dash cinnamon

6 slices of day-old bread (or lightly toasted fresh bread

Cooking spray

3 T. butter

1 large pineapple, peeled and sliced

1. Mix together almond milk and eggs until creamy and yellow. Add a dash of cinnamon. Pour the mixture into a large flat pan (a pie pan works well) that will make for easy bread-dipping.

2. Spray a large heavy pan (we use cast-iron) with cooking spray and heat it over medium heat. Melt 1 T. of the butter in the pan.

3. Dip a slice of bread in the egg mixture, let it soak up the egg mixture, and then flip it over so that both sides of the bread are moist but not soggy. Let excess liquid drip off.

4. Place soaked bread slices (two at a time) in the pan and cook 3 to 4 minutes on each side or until golden brown. Add 1 T. more butter to the pan and repeat with next two slices; then again with another tablespoon of butter until all six slices are cooked.

5. Spray pineapple slices with additional cooking spray and grill over medium heat for 4 minutes on each side or until light grill marks show on each side.

6. Serve French toast alongside grilled pineapple slices. Serves 2 to 3.

Bonus story: Where does the name Califia come from – and why does it sound so much like California? A Spanish legend told of a warrior queen named Califia who ruled over a kingdom of women living on the mythical island of California. Spanish conquistadors believed they had discovered Califia’s bountiful island when they first explored California – and so gave the state its name.
