Summer is here, which means that fresh fruit is abundant, and our bananas often get neglected. While we’re slurping down fresh peaches, cherries, blueberries, and watermelon, our bananas are getting softer and browner in the background. But never fear! We’ve got a tasty way to use up bananas and get your kiddos to eat a little extra fiber too. Makes a great after-school or after-surf snack, depending on what your kids are up to during the month of June.
Whole Wheat Chocolate Chip Banana Bread
2 large or 3 medium ripe bananas
1/4 cup honey
1/2 cup butter, melted and cooled
1/3 cup organic brown sugar
1 1/2 cups whole wheat flour
2 T. flax seed meal
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup chocolate chips
Extra butter for greasing pan
In a large bowl, mash the bananas until the big chunks are smoothed out. Add the eggs and beat well. Add the honey, brown sugar, and melted butter and mix well.
In a separate smaller bowl, combine the flour, flax seed meal, baking powder, baking soda, and salt. Add flour mixture to banana mixture, stirring gently until no more flour is visible. Fold in chocolate chips.
Turn out dough into greased 8 1/2-inch loaf pan. Bake at 350 degrees for 45 minutes. Serve in slices; serves 12.
