Roasted Pepper Salsa – An Epic Salsa Recipe

If you’re going to pick a peck of peppers, you should do something really great with them. Specifically, you should try this Epic Roasted Pepper Salsa. It’s spicy and tasty, and it makes the perfect match for your chips and guacamole.

This salsa began with a trip to a pick-your-own farm, where we had an unexpected pepper bounty. We had jalapenos, pasilla chiles, and Anaheim chiles in the mix (and possibly a few others that we couldn’t identify). Our best solution was to make salsa out of the whole pile.

Roasted Pepper SalsaWe started by roasting about eight of the peppers, using a good mix of all shapes and sizes. With protective gloves on (don’t burn your hands, people!) we cored, seeded, and peeled them all. Then we popped them in a food processor with some tomatoes, lime juice, onion, garlic, and fresh-picked cilantro. Finally, we had a chance to savor the result: A spicy salsa with a smooth, slow burn. This salsa made for a perfect match with our favorite chips and creamy guacamole.

Epic Roasted Pepper Salsa

A delicious roasted pepper salsa, perfect for when you have a deluge of late-summer peppers.

Ingredients

  • 6 to 8 medium=sized peppers, mixed varieties (We used jalapenos, pasilla, and Anaheim chilies)
  • 1 small yellow onion, peeled and quartered
  • 1 clove garlic, peeled
  • 1/2 cup fresh cilantro leaves (approximately one large handful)
  • juice of two fresh limes
  • salt and pepper to taste

Instructions

  1. Under a broiler, roast peppers until skin is blackened on all sides, approximately 3-4 minutes on each side. Wearing gloves to protect your hands, carefully peel, seed, and core the peppers. Place pepper flesh and remaining ingredients in a food processor. Process until large chunks are all broken down. Season with salt and pepper to taste. Serve with chips and/or guacamole

This roasted red pepper salsa is a nice change of pace for the salsa enthusiast who’s looking for something new. Also, it’s a favorite option for anyone who cannot eat tomatoes. Why should you have to be deprived of salsa, of all things?
