Fun Food Saturday: Breakfast Cookies

A friend of ours who grew up on a farm often reminisces fondly about how his mom would serve fresh-baked oatmeal cookies for breakfast. And while the idea of cookies for breakfast might sound decadent, it’s really not that far off base: Oatmeal, raisins, flour, eggs, some brown sugar… Sounds more or less healthy, right? (Although we can’t help but think of Bill Cosby’s “Chocolate cake for breakfast” routine.)

Today’s breakfast cookies are probably pretty close to the farmhouse original. Your basic breakfast cookie is going to have oatmeal or other whole grains, raisins, nuts. and maybe a fruit puree such as applesauce or mashed bananas. If you’re down with the idea of cookies for breakfast, and you’re ready to push the boundaries a little further, you might want to try the Chocolate Champion Cereal Cookies from Sneaky Chef Missy Chase Lapine. It calls for whole-grain cereal as well as her Purple Puree, a crafty little concoction of spinach and blueberries. Oh, and there’s cocoa in there too so you can entice the kids with the promise of real chocolate.

If your family is somewhat open-minded, or at least braver than ours, you should check out the Green Monster Breakfast Cookies from Vegan Strong. These unbaked cookies feature spirulina powder, carrots, ground flax meal, and cacao nibs. (We love any recipe that begins with: “Acquire all ingredients. After that it’s really easy.”)

Looking beyond the ingredients, it’s the slightly decadent feeling of dessert in the morning that makes breakfast cookies such a nice treat. If your kids are like ours, they get excited when they see the pancake griddle, the waffle iron, or the muffin tins — so you can imagine how thrilled they will be when you break out the cookie sheets in the morning. And if the cookies you serve have pureed spinach inside, why make them stop after just one?

    Brief follow-up: We made the Banana-Oatmeal Breakfast Cookies this morning and brought them over to our neighbor’s yard sale. They were devoured almost instantly by young and old alike. Just a note on the recipe: We omitted the wheat germ because we didn’t have any on hand and they were just fine. Also, on the first batch, we didn’t bother pressing them down, which was kind of a mistake because they don’t spread very well when they bake, so you should definitely flatten them before you bake them. In general, though, they’re tasty, filling, and not too sweet – a nice start to the day.
